May Recipe - Breakfast Burrito

Filling, nutritious and tasty!

Ingredients:
2 flour tortillas, 8 inches
4 large eggs
2 TBS milk
Salt & Pepper to taste
1/2 cup avocado chopped
1/2 cup goat cheese
Chopped scallions to taste
Fresh parsley, chive or other herb
Butter for pan
Preheat oven to 350.  Wrap tortillas in foil and keep them warm in oven. Whisk eggs, milk, seasonings, and herbs together.  Melt butter in skillet over medium heat.  Add eggs and cook, stirring until just firm.  Add avocado and cheese.  Spoon egg mixture down center of each tortilla.  Fold and serve.  Enjoy!
